I have an obscene love of marshmallows. In general, I’m not a huge sweets person, but I can devour a whole bag of marshmallows in one go… I said obscene! I’ve been dying to try to make marshmallows, but I haven’t worked with gelatin before, and I have to say, I was a bit intimidated by it. Not sure why, but alas, I was… I have to say this was super easy. I used this recipe. I didn’t want to wait to order gelatin, so I just used Knox unflavored gelatin for my first go. It had 4 packets of gelatin in it. I didn’t know how much was in each one, and after looking briefly and not finding that information readily, and not feeling like measuring or looking it up online, I used all four packets. I added about 1/2 teaspoon of lemon zest, and 1 teaspoon of lemon juice, and I didn’t use mallow root or the probiotics. Beyond that, I followed her recipe, and it worked beautifully!
We used a silicon heart shaped mold for ours, you can find it at your local Ikea. It cut beautifully, and my hubby, who in NOT a marshmallow fan, said these were the best ones he’s ever had. Including all the fancy-schmancy ones I gotten at the chocolatiers I’ve been to in all of our travels. (This made me feel pretty awesome, as our travels have included places like England, France, and Italy)I also loved that this recipe didn’t have sugar or corn syrup. I feel better about letting my wee girl indulge in a giant one of these! I hope you try them and love them as much as we do. Next, I’m going to try earl grey and blueberry… I really could go crazy on marshmallows!
